It’s 1979, and a group of visionaries at the United Nations Food and Agriculture Organization decides the world needs a wake-up call about hunger. They chose October 16th, the day the FAO was founded in 1945, and declared it World Food Day. Fast forward, and this annual celebration has grown into something far bigger than anyone imagined. It has become a global movement connecting what’s on your dinner plate, the tiny universe inside your body, and the health of our entire planet. Who would have guessed that a UN resolution would eventually spark an obsession with soil microbes and plant cells? But here we are, and honestly, it’s about time.
